In today’s post I’ll show you a super-fast & vegetarian version for a wok stir fry with mie noodles, lots of vegetables and hoisin sauce. Alternatively, a variant with chicken or shrimp is also possible. Have fun cooking!

Ingredients for 2 servings:
- 125 grams mie noodles
- 125 grams peas (frozen)
- 2 caroots
- 1 small stick leek
- 1 red bell pepper
- 1 – 2 cloves garlic
- Hoisin sauce
- Soy sauce
- Salt & pepper
- Oil for frying
Required kitchen gadgets, helper & preparations:
- Suitable bowl for mie noodles
- Electric kettle
- Sieve or pasta strainer
- Wok or large pan
…for simple veggie mie noodle wok stir fry with hoisin sauce:
Wash, deseed and cut the peppers into strips. Clean the leek and cut into thin slices. Peel the carrots, cut lengthwise into slices and then into small sticks. Peel the garlic and chop finely. Take 125 grams of peas out of the freezer and let them thaw. Place mie noodles in a suitable bowl, pour boiling water over them and let sit for about 5 minutes.
Heat a large wok or pan with a good splash of oil, add the prepared vegetables (except the peas) to the wok and fry for 4 – 5 minutes over medium-high heat, turning occasionally. Then drain the mie noodles in a sieve and add them to the wok together with the peas.
Then season everything with a dash of soy sauce, a good sip of hoisin sauce and some salt and pepper, afterwards stir well one last time and warm through. Remove the mie noodle wok pan with vegetables from the heat and serve. Have fun cooking! Bon appetit!
