Potatoes, spinach & tomateos combined in a creamy stir fry pan dish. In today’s post, I’ll show you a quick & uncomplicated recipe for a veggie potato pan with leaf spinach & small tomatoes.

You only have to prepare the ingredients for this delicious potato pan, then everything is seared & finally cooked in broth & cream until the potatoes are done & everything has reached a creamy consistency. Have fun cooking!

Creamy Potatoes with Spinach & Tomatoes

Ingredients for 4 servings:

  • 1,25 kilograms mostly waxy potatoes
  • 300 milliliters veggie stock or broth
  • 200 milliliters cream
  • 200 grams small tomatoes
  • 200 grams leaf spinach
  • 75 grams chopped & roasted almonds
  • 1 large onion
  • 1 – 2 clove(s) garlic
  • About ½ teaspon nutmeg
  • Oil for frying
  • Salt & pepper

Peel potatoes and cut into small pieces. Peel the onion and garlic and chop finely. Halve tomatoes and set aside. Wash the spinach leaves and also prepare them. Next, heat a large pan with a splash of oil, add the onions and garlic to the pan and sweat until translucent for 2 – 3 minutes over medium heat, turning occasionally.

Next, put the potatoes in the pan, pour in 300 milliliters of vegetable stock and 200 milliliters of cream & season everything with a very good pinch of salt and pepper and about ½ teaspoon of grated nutmeg.

Bring the contents of the pan to the boil and then simmer gently over a low heat for about 15 minutes, turning occasionally, until the potatoes are cooked and everything has reached a creamy consistency. Afterwards add the tomatoes and spinach leaves and allow the spinach leaves to wilt in the hot pan.

Finally, add one or two handfuls of chopped almonds & season everything with salt & pepper to taste, stir well one last time & remove from the heat. Spread the done potatoes on deep plates and serve. Have fun cooking!
