The Christmas season has begun & now baking cookies can finally start again. Today I’ll show you a quick recipe for delicious Italian cantuccini or biscotti cookies with chocolate chips.

Cantuccini or biscotti are traditional almond biscuits from Italy that are baked twice (like rusks). Have fun baking!

Ingredients for 20 – 25 Cantuccini Cookies:

  • 300 grams flour
  • 125 grams soft butter
  • 100 grams sugar
  • 100 grams chocolate chips/chunks
  • 100 grams almond sticks or chopped almonds
  • 2 eggs
  • 1 sachet vanilla sugar
  • A pinch of salt

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Baking sheet + baking paper
  • Knife to portion cantuccini cookies

Instructions:

Preheat the oven to 180°C (top/bottom heat). Line a baking sheet with parchment paper. Put 2 eggs, 125 grams soft butter, 100 grams sugar, 1 sachet of vanilla sugar & a pinch of salt in a mixing bowl & mix together for 2 – 3 minutes until well combined. Next, gradually add 300 grams flour & stir in until you got a smooth dough & everything is well combined.

Finally, add 100 grams of chocolate chips and 100 grams of almonds sticks or chopped almonds, fold in with a spatula until all the ingredients are evenly distributed & then transfer the dough to the prepared baking sheet.

Flatten the dough & shape it into a long & flat “loaf of bread”. Then transfer the baking sheet into the preheated oven for 25 – 30 minutes & bake it until lightly brown, then take the sheet out of the oven and allow to cool for about 5 minutes.

Cut the dough into slices about 2 centimeters thick with a knife & put it back on the baking sheet with the cut surface facing up. Put the cantuccini back in the oven for another 8 – 10 minutes & bake until golden-brown and crispy. Have fun baking!

    Ich habe das Rezept nachgebacken und dabei die noch vorhandenen Weihnachtsmänner verarbeitet 😉 Total lecker! Meine Cantuccini wurden nicht so hart wie ich es sonst kenne, aber das fand ich sogar sehr gut! Vielen Dank für das tolle Rezept! LG Sonja
