In today’s post, I’ll show you a simple recipe for a delicious rice salad with curry yogurt dressing, veggies & peaches, the ideal salad for any barbecue party or as a main meal.
For those who prefer to eat pasta salad, the rice can easily be replaced with pasta. Otherwise you don’t have to change anything. Have fun cooking!

Ingredients for 1 bowl full of salad:
- 200 grams basmati rice
- 150 grams peas (frozen)
- 150 grams canned corn
- 3 heaping tablespoons yogurt
- 2 heaping teaspoons curry powder
- 50 milliliters milk
- 2 large peaches
- 1 large red bell pepper
- 1 small red onion
- Oil & White wine vinegar
- Salt & pepper
- Parsley for garnish
Required kitchen gadgets, helper & preparations:
- Small pot or saucepan for rice
- Sieve or colander
- Large mixing bowl for salad
- Whisk
Instructions:

Heat up a pot with plenty of salted water to the boil, add 200 grams of basmati rice & cook until al dente for 12 – 15 minutes or according to package directions. Shortly before the end of the cooking time, add 150 grams of frozen peas to the cooking water, let the peas cook briefly, then drain the rice and peas over a colander and let the steam evaporate briefly.
For the dressing, put 3 heaped tablespoons of yoghurt, 2 heaped teaspoons of curry powder, 50 milliliters of milk, a good pinch of salt and pepper, a good dash of oil and white wine vinegar in a mixing bowl and mix with a whisk until well combined.
Next finely chop a red onion. Deseed a red bell pepper and cut into small cubes. Pit the peaches & cut into thin slices or small pieces as well. Then add the vegetables together with 150 grams of corn to the dressing, also add the drained rice & stir everything together well.
If necessary, season the rice salad again and then serve garnished with parsley, for example. Fried chicken is a good side dish. Have fun cooking!
